I've veen doing an 8 team league for a few years now. This is our set up. QB - 2 RB - 3 WR - 3 TE - 1 WR/RB/TE - 1 K - 1 DEF - 2 BENCH - 6. This set up means 16 - 24 QBs are gone, all the starting RBs and WR are pretty much taken. You need 2 DEF or else everyone ends up with a good one and negates the position pretty much.
