The short answer is no. Sadly, Zelda Tears of the Kingdom does not allow multiple save files. We can understand why Nintendo has done this with many of its games, but some players might want to have a different file to try something else. With the enormous scope of the game, it is only normal for players to try and do things differently.

You can have as many as you like. Yes, the game does not overwrite your old manual saves, just the auto saves, quick saves, and exit saves.
So yeah, in there you have to folders, "local" and "remote", plus the file "remotecache.vdf", copy the two folders to whatever backup place you want. Now to start fresh you need to delete the save data withing the menu of the game. Then to load your old save just copy the two folders back to their original place and overwrite everything.

Load your old manual save. Starting new game should only overwrite progressive auto saves, but as long as you never manually saved just load your old manual save.
